THE AGRESTO OF BONA USANZA
The farmers who set up the Cooperative "La Bona Usanza" in Serra de Conti among the Verdicchio hills, near Ancona, wanted to bring back a far tradition, completely abandoned, proposing a new the sweet-sour version. The agresto is syrupy, dense, of dark color, with a flavor initially sour that slowly makes way for the sweet sensation, to the taste of cooked must, up to the feel caramel. Agresto can be used in many several recipes with sweet and sour. All the ingredients have been grapes for centuries until the introduction of the tomato in nineteenth century.
