Today we see together how to prepare a light and tasty recipe, perfect for Spring, using ingredients produced exclusively in the Marche. We are talking about the savoury pie with "Coriandoli" and vegetables, with a "pecorino di fossa" cheese, saffron and acacia honey sauce.

Ingredients for 6 people.

For the pie:

- 220 grams of "Coriandoli"
- 200 grams of zucchini
- 150 grams of carrots
- 50 grams of onion
- 1 liter of vegetable broth
- 40 grams of butter
- 30 grams of Parmesan cheese

For the sauce:

- 90 grams of grated aged "Pecorino di fossa" cheese
- 100 grams of fresh cream
- saffron
- acacia honey

How to prepare the pie

Cook the onion in half of the butter, add the "Coriandoli", toast lightly and blend with a glass of white wine. When the wine is evaporated, add the diced vegetables and continue like a normal risotto. When cooked, stir in the remaining butter and the Parmesan. Put it in the molds and keep warm in a bain-marie.

How to prepare the sauce

Mix all the ingredients and bring to boiling until the right consistency is reached. Place the sauce on the plate, add the pie and decorate with crispy bacon (optional).
